Muffkins

Muffkins by Red Wagon



1 can pumpkin (in bakery aisle)

1 box devils food cake

mix1-2 Tbsp water



Mix together and bake according to temp and time on box. Egg is not necessary, unless you want fluffier muffkins. Use mini-muffin tin. Each muffkin is worth one Weight Watcher's point.



Variation: Someone tried it with spice cake mix, not sure if you use egg for that.

I made these over the weekend and added in two eggs. I made both mini muffins and regular sized muffins with cream cheese frosting. I brought them into work and am not being hounded to make some more.

I use a really similar recipe to make pumpkin cookies.
You use the box of spice cake mix, and one can of pumpkin, and a bag of chocolate chips(optional)
Then bank on a greased cookie sheet, 400 degrees, about 10 minutes.
