Green Bean Casserole Version II

One onion diced and sautéed down with 1/8 of a pkg of bacon (diced).
Two cans of green beans (rinsed real well to get rid of can taste).
Sprinkle with about one tablespoon season all salt.

Cook the sautéed onion/bacon and green beans down for about three hours on simmer. Add in one can of cream of mushroom soup. Put into casserole dish and bake for 30 min on about 350 degrees. Top off with French's french fried onions (can) and bake an additional five minutes (until onions brown). Serve. Yummy. Can be made ahead of time, just leave the onions off of the top until you heat thru, then add to brown.

2 15 oz cans green beans
1 8 oz can sliced mushrooms
1 can condensed mushroom soup
1/4 cup milk
ground pepper to taste
1 1/3 c fried onions from 1 6 oz can French's Fried Onions

On a mixing bowl combine the can of condensed mushroom soup, 1/4 cup milk and pepper to taste. Add the 2 cans of drained green beans and the can of drained mushrooms. Add about 2/3 cup of the fried onions and stir it all together and place in a 1 1/2 quart casserole dish. Bake for 30 minutes at 350*. Stir again in the casserole dish and top with about 2/3 cup of the french onions and bake another 5 minutes. Serve and enjoy.

Sometimes I might add a small can of water chestnuts, chopped for a bit of crunch.

Tater Tot Hot Dish

Version 1

Original Recipe Yield 6 servings
Ingredients 1 pound ground beef, browned
1 (32 ounce) package frozen potato round(Tater Tots)
1 (16 ounce) container sour cream
1 cup shredded Cheddar cheese
1 (10.75 ounce) can condensed cream of mushroom soup
1 (6 ounce) can French-fried onions

DirectionsPreheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.

Arrange tater tots in the prepared baking dish.

In a mixing bowl, combine sour cream, cheese, and mushroom soup and ground beef. Pour this mixture over the tater tots. Sprinkle onions over the top of the casserole.

Bake in the 350 degrees F (175 degrees C) oven for 45 to 60 minutes.

Variation 2

1 small onion, diced
1 (32 ounce) package frozen potato rounds
1 (16 ounce) container sour cream
1 cup shredded Cheddar cheese
1 (10.75 ounce) can condensed cream of mushroom soup
1 15 oz can green beans, drained

In a mixing bowl, combine sour cream, cheese, and mushroom soup. Combine this mixture with the green beans, ground beef and diced onion. Place in the casserole and arrange the tater tots on top

Bake in the 350 degrees F (175 degrees C) oven for 45 to 60 minutes.

(This baking time seems awfully long for the potatoes to be on top and not burn. Maybe the frozen tater tots were mixed in before baking and since we seldom got tater tots at home because they were expensive and were served on their own as a special treat they just seemed to assume the importance of being on top to me. This was a casserole served by my BFF's mom when we had a sleepover. I thought they were rich to be able to serve this.)

Chewy Chocolate Chip Bars

ingredients:
1 yellow or white cake mix
2 eggs
1/3 oil or unsweetened applesauce
3/4 cup chocolate chips

directions:
1. preheat oven to 350
2. mix together cake mix, eggs and oil. stir the mixture until all the powder is evenly mixed in. stir in the chips. spread the mixture evenly in a 9x13 pan.
3. bake 14-16 minutes, or until light golden brown on top.

Pumpkin Pie Bars

bottom layer:
1 29-oz can pumpkin
1 cup milk
1 cup sugar
2 eggs
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
1/2 tsp salt
top layer:
1 box yellow cake mix
3/4 cup walnuts, chopped (you can probably eliminate this)
1 1/2 sticks butter, melted
directions:
1. preheat oven to 350
2. in a large bowl, mix all ingredients for the bottom layer. spread mixture into a 9x13 pan.
3. pat yellow cake mist over bottom layer. spread (or not) walnuts over dry mix. cover dry mix with melted butter
4. bake 45-55 minutes, or until golden brown.

Oatmeal Raspberry Bar Cookies

Oatmeal Raspberry Bar Cookies

1/2 C room-temperature butter
1/2 C light-brown sugar
1 C flour
1/4 tsp. baking soda
1/8 tsp salt
1 C rolled oats
3/4-1 C raspberry jam (the original recipe calls for seedless - but I use homemade with seeds and it is just as good)

Heat oven to 350 degrees F. Butter an 8" square pan, line with foil, then butter the foil.

Mix together all ingredients except for the jam.

Press 2 cups of the mixture into the bottom of the pan.

Spread jam to within 1/4" of the edge. Sprinkle the remaining crumb mixture over the top and lightly press into the jam.

Bake 35-40 minutes and allow to cool on a wire rack before cutting.
